Making one pound of raw honey took 60,000 bees, traveling 55,000 miles, visiting more than 2 million flowers, to gather enough nectar. The biggest threat to honey bees is the shortage of flowers and pollen sources.

Local honey from Versailles Farms will crystallize after 12 months but that’s okay. That’s how you know it’s raw. Springtime flows create our light colored, delicately sweet, champagne honey. Late summer flows make a darker color, deeper flavored, wildflower honey.

Raw honey has a positive immuno-therapeutic response; it cures allergies and soothes coughs. Far less expensive than allergy medicines, local honey is natural, and it tastes good.

Honey has antibacterial, anti-inflammatory, antifungal, and antioxidant activities for treating wounds and killing bacteria. Raw honey can boost memory, provides nutrients for general health, and makes a great workout fuel.
