The Unbearably Healthy (and Delicious) Kale
Kale is one of the dark green superfoods that we grow on Versailles Farm. It’s one of the most nutrient-dense foods on the planet. Eating one cup of chopped kale provides a rich source of phytonutrients such as vitamin A, E, C, & K, thiamin, riboflavin, pantothenic acid, iron, calcium, potassium, phosphorus manganese, potassium and copper. Kale is a powerful antioxidant and can help lower cholesterol.
Kale originated in the eastern Mediterranean around 2000 BC and belongs to the brassica family of dark cruciferous greens. In Northern Europe kale is served as a winter comfort food along with potatoes and bacon or sausage. In Italy it’s served with white beans and garlic.
Versailles Farm grows the white Russian variety of kale. We harvest its wide leaves at the immature stage while they’re still tender. We eat it raw with a squeeze of fresh lemon and mashed with a ripe avocado for a delicious whole meal. We also juice the nutritionally dense stems for an early morning energy drink.
